McMurray Ranch Pinot Noir
This wine has distinctive cherry flavors and vanilla notes with spice. It marrys perfectly with the lemon and veal.
Lemon Veal Scallops
Serves 4
3 tbsp butter
8 veal scallops, floured and seasoned
1 1/2 cups heavy cream
juice of 1 lemon
chopped fresh parsley
dash paprika
salt & pepper to taste
Preheat oven to 250 degrees. Heat 1/2 of the butter in non-stick frying pan. When hot, add half of veal; cook each side for 2 minutes over high heat. Set aside and repeat procedure for remaining veal. Keep hot in oven. Add lemon juice to frying pan and cook 1 minute over high heat. Add cream and parsley: stir and continue cooking for 3 to 4 minutes over high heat. Replace veal back in frying pan and sprinkle with paprika. Cook 1 minute to preheat veal. Perfect with Asparagus!!
